An apparatus for making ice cream according to one embodiment of the present invention comprises: a dasher for agitating air and a liquid ice cream source solution that is inputted into a sealed cylinder, the dasher being positioned within the cylinder; a dasher motor for rotating the dasher; a motor RPM control means for controlling the frequency of the dasher motor; a dasher motor load measurement means for measuring the load of the dasher motor; and a control unit for determining a timing for changing the rotational speed of the dasher motor on the basis of the load measured by the dasher motor load measurement means and for controlling the motor RPM control means so as to change the frequency of the dasher motor to a predetermined frequency if it is determined to change the rotational speed of the dasher motor.
