The present invention relates to a method for processing ginseng fruit including an ultra-high pressure treatment step for performing ultra-high pressure treatment of ginseng fruit. According to the present invention, ginseng fruit juice, which is obtained by the ultra-high pressure treatment, has very high preference, and has a higher content of active ingredients included in the ginseng fruit, can be obtained at a higher yield. Therefore, the method for processing ginseng fruit can be advantageously used in a food, cosmetic, or pharmaceutical field which needs the same. The method for processing ginseng fruit includes the following steps: removing seeds, separating ginseng fruit from juice and solid materials, treating the solid materials with ultra-high pressure, and obtaining juice of the ginseng fruit.;COPYRIGHT KIPO 2016
