The present invention relates to a method for processing ginseng fruit including an ultra-high pressure treatment step for performing ultra-high pressure treatment of ginseng fruit. According to the present invention, ginseng fruit juice, which is obtained by the ultra-high pressure treatment, has very high preference, and has a higher content of active ingredients included in the ginseng fruit, can be obtained at a higher yield. Therefore, the method for processing ginseng fruit can be advantageously used in a food, cosmetic, or pharmaceutical field which needs the same.
