The present invention relates to a manufacturing method of a composition which significantly improves an effect of inhibiting pancreatic lipase based on a specific astringent persimmon, which is a natural product, specifically, a blue persimmon having a certain size. More specifically, disclosed is a manufacturing method of a composition for inhibiting pancreatic lipase using a blue persimmon. The manufacturing method of a composition for inhibiting pancreatic lipase using a blue persimmon comprises the steps of: (a1) producing persimmon juice by injecting a blue persimmon having the diameter of 6 to 10 cm into distilled water; (b1) aging the persimmon juice for 0.5 to 5 days; (c1) collecting a supernatant from the aged persimmon juice after centrifuging the aged persimmon juice; and (d1) decompression-concentrating and freeze-drying the supernatant. The composition has a pancreatic lipase inhibition rate of 60% or more.
