摘要

The present invention relates to a transformant of rice to produce rice seeds with low amylose contents; and to a manufacturing method thereof. In regard to the transformant of rice in the present invention, the expression of a soluble starch synthase (SSS) I gene of rice is inhibited by RNA interference (RNAi). Rice produced from the transformant of rice in the present invention has a reduced amylose content and has a medium amylose content between amylose contents of nonglutinous rice and glutinous rice. Furthermore, the structure of starch in produced rice grains shows a uniform and smooth curve, and the taste of the rice grains is greatly excellent. Therefore, the method and the transformant of rice in the present invention can be highly practically used to develop a variety of rice with an excellent taste. The manufacturing method of the transformant of rice comprises the steps of: (a) manufacturing a recombinant vector which includes a polynucleotide inhibiting the expression of an SSS I gene of rice by RNAi; and (b) transforming a rice plant by using the recombinant vector to manufacture the transformant of rice.
