摘要

The present invention relates to a transformant of rice producing a seed having a low amylose content and a process for producing the same. In the present invention, expression of rice soluble starch synthase (SSS) I gene is suppressed through RNA interference (RNAi) of rice transformants. The rice produced in the transformant of rice of the present invention has a reduced amylose content and a middle amylose content between rice and glutinous rice. The starch structure in the produced rice grain shows a uniform and smooth curved structure. The food is very good. Therefore, the method of the present invention and the rice transgenic plants can be very useful for developing rice varieties having excellent taste.
