The present invention relates to a storing method to maintain the freshness of horticultural crops, and more specifically to a storing method to maintain the freshness of horticultural crops which stores a large quantity of horticultural crops in a condition where the concentration of oxygen is low and the concentration of carbon dioxide is high, and thus the metabolism of horticultural crops is minimized, organic acid decreases and aging caused by softening of crops and chlorophyll degradation can be prevented. Therefore, the method is capable of storing the horticultural crops for a relatively long time while the quality of the same is maintained. The storing method to maintain the freshness of horticultural crops comprises the steps of: sorting horticultural crops according to the types and sizes; washing the sorted horticultural crops; sterilizing the washed horticultural crops using drinkable electrolyzed water; drying the horticultural crops sterilized in the previous step; and storing the horticultural crops, dried in the previous step, in low-temperature storage. In the storing step, the concentration of oxygen is 4 to 20 times lower than the 20% of oxygen concentration in the atmosphere, and the concentration of carbon dioxide is 30 to 150 times higher than the 0.03% of carbon dioxide concentration in the atmosphere to minimize aging and chlorophyll degradation of the horticultural crops and thus aging of the same can be prevented.;COPYRIGHT KIPO 2016
