The present invention relates to a method of producing a fermented mulberry metabolite which includes a fermentation process where effective microorganism (EM) culture medium is inoculated into a pulverized mulberry solution for fermentation. A low calorie and high functional fermented mulberry metabolite produced thereby can be used effectively as an ingredient for regular food and functional food, a sub-ingredient for health supplements, and a material for functional cosmetic products. Specifically, the fermented mulberry metabolite can be used excellently as an anti-obesity material and a material for lowering blood sugar, as the metabolite is low in sugar content and calories as well as factors increasing blood sugar.;COPYRIGHT KIPO 2016
