摘要

The present invention relates to novel Penicillium solitum (P. solitum) M2439 and uses thereof. More specifically, the P. solitum M2439, separated and identified from soybean sauces, can obtain production yield suitable for industrial production and produce soybean sauces having plentiful flavors of traditional soybean sauces by having excellent cleavage activity of protein, and thus solves problems of production method of modified soybean sauce using conventional Aspergillus oryzae, thereby being effectively used as a spawn strain for producing soybean sauces.
