The present invention relates to a beta-cyclodextrin clathrate of isoflavone, having excellent long-term stability in an aqueous solution, and relates to a manufacturing method thereof. The manufacturing method has effects in providing a manufacturing process of the beta-cyclodextrin clathrate having improved stability by blocking the formation of an isoflavone-clathrate generated in a step of clathrating soybean embryo-derived isoflavone with the beta-cyclodextrin. The manufacturing method has excellent effects in providing the high contents of a water-soluble isoflavone composition having at least 6% of daidzin, glycitin, and genistein of the composition by increasing a formation rate of the beta-cyclodextrin clathrate in the manufacturing process.;COPYRIGHT KIPO 2016
