FIELD: food industry.;SUBSTANCE: invention relates to food industry and can be used to produce culinary product from quail meat, belonging to best quality group. Quail meat fillet is minced in a meat mincer and minced mass is prepared. Simultaneously filling from blueberries is prepared. Minced meat is divided into portions, blueberries are placed inside each portion, minced meat undergoes forming, then it is covered with flour from sweet potatoes, and dipped in melange from quail eggs, cutlets are coated with breadcrumbs and fried in deep fat, cooled and packed. Quantitative ratio of the components is selected.;EFFECT: obtaining products with improved organoleptic and physical-chemical indices, with content of components, reducing the signs of allergy.;1 cl
