PROBLEM TO BE SOLVED: To provide an improvement agent of meat quality for livestock which shows high meat quality improvement effects, which does not deteriorate easily and can be stably stored for extended periods and for which the starting materials can be easily procured, and a feed for improving meat quality made therefrom.SOLUTION: This improvement agent for meat quality of livestock is made from modified soybeans. Whole fat soybeans to which sugars are added are heated, the content of neutral detergent fibers increases compared to before heating, the digestibility of fats by the livestock compared to before heating is increased, and the progression of oxidation of fats is prevented.SELECTED DRAWING: None
