The present invention relates to a semi-continuous and semi-automated screening device and process for the isolation of banana starch, either from the fruit flour or from the fresh pulp of fruits. This device possesses the advantage of providing the initially added water recirculation thus achieving an effectively employed liquid control during the operation. The developed process affords to separate the starch from the green or immature plantain preserving the high yield and high purity, morphological and molecular properties, present at isolated starch without damage.
