The present invention relates to a method for manufacturing udon noodles using rice as a main material, the method having nutritional component of rice as it is and allowing noodles to have chewy and aromatic texture and to be stored for a long time even in the atmosphere, the method comprising the steps of: inputting rice sufficiently soaked in water into a pulverizer together with a certain amount of water and pulverizing the rice by the pulverizer to make a porridge state main material of udon noodles; inputting 0.3-0.7 Kg of starch, 200-500 g of cooking oil, and salt of an amount with a degree which does not make the main material of udon noodles salty into 1-2 kg of the porridge state main material of udon noodles and mixing the resultant; allowing the main material of udon noodles mixed with the sub materials to be then received in a steaming frame by spreading the materials in a thickness of 0.2-0.7 mm and steaming the main material of udon noodles using steam; sequentially drying the main material of udon noodles under a sunlight for 3-5 hours and using air for one hour; scattering corn flour on one surface of the dried main material for udon noodles, laminating the main material for udon noodles on which the corn flour is scattered in at least two or more layers, and pressing the resultant by a predetermined pressure; supplying the pressed main material for udon noodles to a udon noodle drawing frame and drawing the udon noodles.;COPYRIGHT KIPO 2016
