The present invention provides sweet bean jelly and granules having antioxidant activity, and a manufacturing method thereof. According to the present invention, the sweet bean jelly exhibits high antioxidant activity in comparison with sweet bean jelly not including a medicinal herb extract of the present invention; exhibits remarkably high antioxidant activity in comparison with sweet bean jelly containing an oriental medicine sold on a market; and exhibits smooth texture due to low hardness and chewing properties, so as to be usefully used as a nutritional supplementary snack for an old person difficult in trituration. According to the present invention, the granules have storage stability due to low moisture content, are easily adsorbed in a body due to high solubility when being taken, and exhibit excellent antioxidant activity, so as to be used as a health functional food, an oriental medicine, and various basic processed foods. According to the present invention, the sweet bean jelly and granules exhibit the excellent antioxidant activity, and thereby being used as a functional food for preventing or curing relating diseases. According to the present invention, the method comprises the following steps of: (a) acquiring an extract of medicinal herbs; (b) mixing agar powder, fructooligosaccharide, salt, and adzuki bean paste; (c) mixing and agitating the mixture of the step (b) and the extract; and (d) forming a mixed composition of the step (c).;COPYRIGHT KIPO 2017
