The present invention relates to grilled cheese containing natural pigments and a beef extract, and to a manufacturing method thereof. More particularly, the manufacturing method comprises the following steps: (a) adding natural pigment materials and a beef extract to raw milk; (b) sterilizing the raw milk containing the natural pigment materials and the beef extract; (c) adding acid to the sterilized raw milk to ferment and solidify the raw milk, so as to manufacture curd; (d) cutting and mixing the curd to remove milk serum; (e) adding the natural pigment materials and the beef extract to the curd from which the milk serum is removed; and (f) forming and pressing the curd. According to the present invention, manufactured cheese includes bioactivity, such as an antibacterial function, an anticancer effect, an antioxidative function, etc., useful to a body contained in the natural pigment materials, so high value-added cheese with excellent nutrition and functionality can be manufactured.
