The present invention relates to grilled duck meat patties, and to a preparation method thereof. According to the present invention, the method for preparing the grilled duck meat patties comprises the following steps: aging trimmed duck meat in low temperature water and then grinding the same so as to prepare raw meat; putting water, Korean angelica roots, and milk vetch roots into an aged seasoning for grilled short rib patties, and then boiling the same; removing the Korean angelica roots and milk vetch roots; additionally putting a fermented onion extract, crushed garlic, sugar, ground pear, ground apple, and seasonings to obtain seasoning sauce; adding the prepared seasoning sauce, salt, and sesame oil into the raw meat and then kneading and molding the same; and heating the patty dough with fire made by hardwood charcoal. By undergoing the step for aging the duck meat at a low temperature, odor of duck meat can be eliminated, and a texture becomes softened. In addition, the fermented onion extract contained in the seasoning sauce reduces the inherent smell of the duck meat; and spicy or bitter tastes of Korean angelica roots, milk vetch roots, and onion are lessoned, while increasing a storage period of the grilled duck meat patties.
