The present invention relates to a low-fat mayonnaise containing a ground product of a green fruit skin of fruits, which comprises 1 to 8 parts by weight of starch, 5 to 15 parts by weight of gums, and 10 to 15 parts by weight of oil, with respect to 1 part by weight of a ground product of a green fruit skin of fruits.
