Disclosed are a method for processing meat salted with a natural material extract in which residual pesticides and heavy metals are removed without chemical food additives, and meat processed by the same. To this end, the method comprises: an extraction step of extracting an extract from natural materials; a salting step of inputting the extract, meat and a salting material in a tumbler and performing tumbling at pressure which is lower than the atmospheric pressure; a pressure adjusting step of adjusting the pressure in the tumbler at the atmospheric pressure so that the extract and the salting material smoothly penetrate into the meat; and an aging step of cooling and aging the meat. According to the present invention, particles of the natural material extract and the salting material uniformly penetrate into the meat; salting time is reduced and emission of juice is inhibited; and flavors peculiar to meat are maintained.;COPYRIGHT KIPO 2017
