The present invention relates to a pepper drying apparatus which dries pepper by supplying hot air into a drying chamber. More specifically, the present invention relates to a pepper drying apparatus including a roasting device, and to a pepper processing method thereby. In an attempt to increase flavor and aroma of pepper in a drying process, the pepper drying apparatus additionally includes the roasting device for roasting pepper in a drying chamber.
