The present invention relates to a method for identifying the bovine or porcine animal species of origin for meat or gelatin, possibly contained in a specimen of a foodstuff to be tested, wherein the following steps are carried out: a/ preparing a peptide preparation of a protein extract of whole proteins or a peptide extract from said specimen; b/ producing a spectrum of said preparation by mass spectrometry of the MALDI TOF type; c/ comparing the spectrum obtained in step b/ with at least one reference spectrum for a said extract of a meat reference specimen chosen at least from among bovine meat and porcine meat, or a gelatin reference specimen chosen at least from among bovine gelatin or porcine gelatin; and d/ identifying the presence of meat or gelatin, respectively, of the mammal animal species of origin for said tested sample as being that of a said reference animal species if, in the spectrum obtained in step b/ above, there are shared peaks comprising at least specific peaks of a said reference spectrum from step c/ above if applicable and/or by determining the proximity of the spectrum of the tested sample to a reference spectrum, preferably by hierarchical classification.
