PROBLEM TO BE SOLVED: To provide a food sterilization device extremely efficiently performing intermittent sterilization, and a food intermittent sterilization method using the same.SOLUTION: Provided is a food sterilization device by intermittent sterilization comprising: a heating tank 1 where a food basket 18 stored with a food bag 20 is immersed below the water face, and the food bag 20 is subjected to heat sterilization with heated water heated from an ordinary temperature to 60 to 100°C; an installation table mounted with the good basket 18 for 20 to 24 hr and germinating spore cells; and a cooling tank 2 where the food basket 18 is immersed below the water face and the food bag is cooled with cooling water, comprising: a horizontal movement member 11 movable among a guide rail 10; a longitudinal movement member 14 movable up and down to the horizontal movement member 11; and a driving means driving the horizontal movement member 11 and the longitudinal movement member 14, in which the food basket 18 held to the longitudinal movement member 14 can be selectively charged/discharged to the heating tank or the cooling tank 2 by the driving means, and further, the food basket 18 can be mounted on the installation table.SELECTED DRAWING: Figure 1
