process of obtaining fatty acid esters by interesterification of triacylglycerols using double lamellar hydroxides. The present invention proposes the use of double lamellar hydroxides as solid catalysts in interesterification reactions of triacylglycerols with alkyl esters. As a general example, the reaction between triacylglycerols and methyl acetate is described for the production of fatty acid esters whereby glycerol is recovered as mono-, di- and triacetin, i.e. eliminating the subsequent steps of glycerine purification. as in the traditional process of synthesis of fatty monoesters. lamellar double hydroxides are generically represented by the formula: [mx tv1 (oh) 2] a í. where: m 2 represents a bivalent cation (zn 2+, ca 2+, mg 2+, mn 2+, fe 2+, co 2+, n 2+, cu 2+, sn + 2); m3 + represents a trivalent cation (la3 +, a13 +, cr3 +, mn3 +, fe3t, coa + ni3 +, ga3 +) and am- represents the charge-intercalated anion (halides, oxyions, oxo and polyoxometalates, complex anions and organic anions).
