The invention describes a method for inhibiting the growth of pathogens and spoilage microorganisms in nutrient dense environments of high humidity (65 to 80 wt%) and low salt (2.0 wt%) with a range of ph from 5.5 to 8.5. Applying an organic acid or salt thereof with a fermentation-derived antimicrobial peptide provides a robust solution to restrict the growth of spores and vegetative cells without the need for chemicals such as nitrite or sodium nitrate.
