FIELD: food industry; fodder industry.;SUBSTANCE: food or fodder product having moisture content from 65 to 80 wt %, pH value from 5.5 to 8.5 and salt content of less than 2.0 wt % is provided. Food or fodder product interacts with an antimicrobial composition containing acetic acid or its salt in concentration of at least 0.275 wt % and nisin in range from 1 to 50 ppm, for controlling growth of pathogens and microorganisms causing damage. Pathogens are represented by species Listeria, Clostridia, Lactobacilli, Leuconostoc, Pseudomonas and Brochothrix. Antimicrobial system containing a food or fodder product has the following characteristics: moisture content from 65 wt % to 80 wt %, pH value from 5.5 to 8.5 and content of salt less than 2.0 wt %.
