The present invention relates to new strains of Escherichia coli derived from the W3110 strain, named W/Sc4CL-AhSTS and W/Sc4CL-VvSTS, constructed by engineering metabolic pathways for resveratrol biosynthesis, which is an exclusive compound of some plants with extensive pharmaceutical potential. Also, it refers to an optimized method of resveratrol production based on metabolic pathway engineering strategies. Said process comprises the use of the strain of E. coli W/Sc4CL-VvSTS genetically modified to produce resveratrol from coumaric acid, which a fermentation process using minimal medium is supplemented with glycerol and coumaric acid reaching titers of up to 74.3 mg /L of resveratrol. Additionally, it comprises an innovative method for the production of resveratrol from a co-culture system from the strain W/Sc4CL-VvSTS capable of producing coumaric acid from glucose or glycerol, thereby achieving titles of up to 22.6 mg/L without adding the said acid.
