The present invention relates to a novel process of nixtamalization to produce food products derived from maize, which is a novel way to take advantage of amylolysis activity (alpha and beta amylase), thereby improving the quality of traditional products made from maize. The process establishes the optimum conditions of maize germination, for achieving improved nutritional conditions, such as the content and quality of protein, digestibility, phytonutrient and vitamin, among others, as well as the induction and action of the enzymes that perform a partial modification of the starch reserves of the seed and the generation of sugars.
