The invention relates to a process and a laboratory equipment meant to determine the behaviour of various solid raw food materials, as well as of various solid food products, upon cutting. According to the invention, the equipment comprises a pig-iron bed frame (), an electronic unit () with micro-processor, an electronic computer () and an electronic printer (), and for performing, in laboratory condition, the cutting of a food matter () as close to the conditions of the manual or electro-mechanical cutting as possible, there is used a circular knife segment () with eccentric fastening, clamped with a threaded cover () on a rotation shaft (), whereon an incremental rotation sensor () and a dynamometric sensor () of momentum are mounted. According to the invention, the process carries out the joining of a system for requesting the food, a system for displacing the knife, a system for measuring the physical quantities corresponding to the test, as well as a system for automatically processing data in a unitary structure allowing the measurement, in real time, of the value of the maximum cutting force Fand/or the value of the maximum cutting momentum M, the recording of the test diagram in the maximum cutting force F- cutting length Lcoordinates, the recording of the test diagram in the maximum cutting force F- cutting depth Hcoordinates, the recording of the test diagram in the cutting momentum M- cutting length Lcoordinates, or the recording of the test diagram in the cutting momentum M- cutting depth Hcoordinates, to automatically calculate the cutting mechanical work Las being the integral of the curved surface in the test diagram carried out in the maximum cutting force F- cutting depth Hcoordinates.
