A method for the control of an enzymatic pretreatment process, for example a maceration process, wherein the method comprises the actions of: a) providing a sample to a system with a tank; b) obtaining a sample mixture: - adding one or more enzymes to the sample if the sample does not already contain one or more enzymes or - possibly adding one or more enzymes to the sample that already contains one or more enzymes; c) continuously exposing a portion of the sample mixture to an infrared (IR) spectrometer; d) continuously measure the attenuated total reflectance (ATR) IR spectra of the sample mixture with the real-time IR spectrometer at wavelengths between 400-3500 cm-1 during the enzyme pretreatment process and e) supply the spectra of IR measured to a calculation unit that: - calculates the information in relation to the specific species present in the sample mixture during the enzymatic pretreatment process based on the IR spectra, where the information in relation to the specific species present in sample mixtures it is: * the relationship between the different specific species and / or * the concentration of one or more of the specific species and / or * the degree of polymerization of one or more of the specific species; and - feeds back information regarding specific species in the sample mix to the user and / or to a tank control system connected to the tank.
