The present invention relates to a method of purifying complex polysaccharide derived from medicinal crops by using acid hydrolysis, alkali hydrolysis, and drowning-out crystallization, capable of reducing energy consumption and costs for operating processes by omitting an odor removal process and a grinding process. To achieve the purpose, the method includes: a material preparation step of preparing a material mixed with dried and ground medicinal crops; an acid hydrolysis step of conducting acid hydrolysis by adding some of the material to an acidic aqueous solution including strong acid and weak acid; an alkali hydrolysis step of conducting alkali hydrolysis by adding the rest of the material to an alkali aqueous solution including weak alkali and strong alkali; a filtering step of filtering unreactive residues in the processed reactants; and a hydrolysate mixing and neutralizing step of terminating reactions by neutralizing each of the reactants by mixing the reactants.
