The present invention relates to a method of manufacturing fermented red ginseng powder. The method includes: a step of making a red ginseng powder medium by using sterilized red ginseng powder; and a step of making fermented red ginseng powder by engrafting a mixed strain into the red ginseng powder medium and then fermenting the mixture. The mixed strain is mixed with at least one among a bifidobacterium longum strain, a blifidobacterium lactis strain, a lactobacillus rhamnosus strain, a Lactobacillus acidophillus strain, and a streptococcus thermophiles strain, and the red ginseng powder and the mixed strain are fermented at a ratio of 10:2. The fermented red ginseng powder is capable of including ginsenoside Rg3 content and improving anti-inflammatory activity in human bodies.;COPYRIGHT KIPO 2018
