The present invention relates to a method of producing a semi-dried sweet potato product using corn silk and apple peel, and a semi-dried sweet potato product produced thereby. The method comprises the steps of: putting 0.2-2 parts by weight of dried corn silk into 100 parts by weight of water and heating the same for 30-50 minutes to be extracted, putting 2-10 parts by weight of dry apple peel powder and 0-3 parts by weight of sugar, with respect to 100 parts by weight of water, into the above mixture and heating the same for 60-100 minutes to be extracted, and filtering the extracted mixture to obtain a corn silk and apple peel extract; peeling, steaming and cooling sweet potatoes, and shaping the cooled sweet potatoes into a dried product; coating the surfaces of the shaped sweet potatoes with the extract; and drying the sweet potatoes coated with the extract to a water content of 30-40% to produce a semi-dried sweet potato product. The semi-dried sweet potato product produced according to the present invention combines the sweet potato having anti-constipation and anti-obesity effects due to an abundance of dietary fibers, with the corn silk and apple peel extract, thereby enhancing antioxidant function and anti-obesity effect, and thus has the effect of preventing diseases caused by obesity and oxidative stress, and also has high palatability due to excellent taste and aroma.;COPYRIGHT KIPO 2018
