The present invention relates to a method for producing semi-dry sweet potato having antioxidative effects by using red beet, carrot, Aster scaber Thunb, and apple peel, and semi-dry sweet potato produced thereby. More specifically, provided are a method for producing semi-dry sweet potato having antioxidative effects, and semi-dry sweet potato produced by the method. To this end, the method comprises the following steps: obtaining a mixed extract of red beet, carrot, Aster scaber Thunb, and apple peel; steaming sweet potato, cooling the same, and then molding in a specific form; applying the mixed extract to a surface of the molded sweet potato; and drying the extract-applied sweet potato so as to obtain semi-dry sweet potato. According to the present invention, the semi-dry sweet potato has good taste and excellent antioxidant effects, which helps to prevent and ameliorate brain disease.
