The present invention provides a method for manufacturing germinated Andes cereals. By the manufacturing method of the present invention, the germination ratio of the Andes cereals is remarkably improved, the texture is improved by softening the tissue as compared with conventional Andes cereals, and an effect of forming health functional materials is provided as various nutritional components and enzymes according to germination are activated.
