The present invention relates to a method for manufacturing vinegar using unripe apple which provides vinegar having superior organoleptic quality to a consumer by applying mulberries, pine needles, cinnamon, and unripe apples. The unripe apple having a diameter of 4-6 cm are selected and applied to the vinegar manufacturing process, thereby manufacturing vinegar having an excellent effect for preventing various vascular diseases and contributing to reduction of body fat. The present invention provides a method for manufacturing vinegar using unripe apple which is capable of manufacturing vinegar having excellent effects of ingredients of each material by introducing mulberries, pine needles, and cinnamon at a compounding step.
