Provided is a method for producing a kudzu root fermented vinegar with excellent antioxidant activity, antimicrobial activity, cell viability and estrogen-like activity. The method for producing a fermented vinegar using a kudzu root includes the steps of: preparing a kudzu root hydrothermal extract by adding distilled water to kudzu root powder; adding yeast to the kudzu root hydrothermal extract to produce a kudzu root alcohol fermented solution; and adding acetic acid bacteria to the kudzu root alcoholic fermented solution to produce a kudzu root fermented extract.
