The present invention relates to a method of manufacturing boiled meat by using turkey meat. The method includes: an injection step of adding omega-3 (unsaturated fatty acid) to the inside of turkey meat evenly by using an injection device; and a tumbling step of salting and tenderizing the meat through a tumbling unit including cooling and heating units installed in a side of a rotary drum to repeatedly cool and heat the rotary drum repeating rotation normally and reversely. Thus, the method is capable of reducing the time required for making boiled meat through an automation process, and easily slicing the boiled meat through an automation process including a slicing step. Since the method includes the tumbling step of salting and tenderizing the meat through a tumbling unit including cooling and heating units installed in a side of a rotary drum to repeatedly cool and heat the rotary drum repeating rotation normally and reversely, salting and tenderizing solutions on the boiled meat are evenly mixed and kept mixed within a short time through the tumbling step, and thus, the efficiency of salting and tenderizing the meat can be improved. Meanwhile, the salting and tenderizing solutions on the boiled meat are evenly mixed and kept mixed within a short time through the tumbling step to improve the efficiency of salting and tenderizing the meat, and thus, the mouthfeel and flavor of the boiled meat are improved.
