To provide: an agar composition that can be easily dissolved in low-temperature water; a food product containing said agar composition; and an agar easily solubilizing agent.SOLUTION: The agar composition according to the present invention is characterized in having a structure in which an agar, a starch hydrolyzate having a weight average molecular weight of 8000 to 800000, and a polymerized phosphate molecule are entangled with each other. Further, the agar composition according to the present invention can be obtained by: adding an agar, a starch hydrolyzate having a weight average molecular weight of 8000 to 800000 and a polymerized phosphate to water and subjecting to heating/dissolution; and drying at a temperature at which a structural transition due to gelation of the agar does not occur.SELECTED DRAWING: None
