To provide a manufacturing method for ceramic-metal joint material that can suppress the solidification of brazing material just above a scribe line of a laminate, a manufacturing apparatus and a ceramic-metal joint material.SOLUTION: The present invention includes: a joining process that joins metal plates to both sides of ceramic base material to form a metal layer by clamping a laminate where the metal plate composed of copper or copper alloy is laminated through a Cu-P based brazing material on the surface of the ceramic base material using a pair of pressing plates and heating it; and an etching process that etches the laminate along a scribe line and separates the metal layer for each region surrounded by the scribe line. Multiple releasing surfaces with prescribed widths spaced from the surface of the laminate are provided to the pressing surface of the pressing plate along two sides forming one corner part of the pressing plate and on positions that avoid just above the scribe line when clamping the laminate. In the joining process, a brazing material storing space is formed between the surface of the laminate and the multiple releasing surfaces.SELECTED DRAWING: Figure 1
