PROBLEM TO BE SOLVED: To provide a novel acquisition technique of caffeoylquinic acids.SOLUTION: In an example of an embodiment, a caffeoylquinic acid extraction method comprises a preparation step of preparing an extracting solvent which is added with a plant containing caffeoylquinic acids, and contains an ionic liquid which can dissolve cellulose. In an example of an embodiment, the caffeoylquinic acid extraction method also comprises extraction steps of extracting with the extracting solvent after the plant is added. In an example of an embodiment, the caffeoylquinic acid extraction method also uses a mixed solvent containing an ionic liquid as an extracting solvent.
