摘要

The present disclosure is related to food prepared by extrusion consisting of a mixture of 40%-80% cereal flour and 20%-60% legume flour fermented by Rhizopus microsporus var. oligosporus, presented in different commercial forms such as churro, star or donut. The resulting food is high in protein, rich in fiber, essential amino acids, minerals and folic acid. The product is based on the fermentation of legumes, as comprises a technological advantage compared to the consumption of cooked products, because of the antinutrient contents present in these seeds that have not shown a decrease in the cooking process, contrary to fermentation.
