The present utility model relates to the food preservation more particularly to a method of fermenting Iba (Averrhoa bilimbi) as appetizer. Iba fruit is washed, sliced, and pits or seeds are removed and mixed with sliced/shredded onions, garlic, ginger, pepper strips, vinegar, brown sugar, and salt. The mixture is fermented in a slightly sealed container for 6-7 days and sealed hermitically.
