The process of producing tomato powder from Diamante cultivar Lycopersicon esculentum comprises the steps of selecting half-ripe and firm tomatoes; cleaning the tomatoes; blanching the tomatoes; cooling the tomatoes; paring the tomatoes, slicing the tomatoes; arranging the slices; curing, weighing, packaging and labeling; and storage.
