A method of reducing batch time in a fermentation process comprising the steps of: i) Converting the starch-containing material to fermentable sugars, where the starch-containing material is corn, followed by ii) Fermentation of the fermentable sugars with a microorganism to fermented must, iii) Submit the fermentation medium during the fermentation process to an enzymatic composition comprising a xylanase and a pectinase, iv) Separation of the fermentation product in the fermented must, where the fermentation product is ethanol.
