Provided is a method for producing rare ginsenosides by pretreating a ginseng berry by a steaming process and making a ginsenoside-containing substrate obtained from the ginseng berry react with β-glucosidase, hemicellulase, or a mixed enzyme thereof. According to a production method of the present invention, the content of various rare ginsenosides having high bioavailability can be effectively increased by effectively decomposing a plurality of substrates contained in the ginseng berry. Therefore, rare ginsenoside materials produced by the production method of the present invention have excellent absorption properties and efficacy, thereby being used for a health functional food, a cosmetic raw material or the like. Also, if the rare ginsenoside materials produced by the production method of the present invention are separated into a single component having high purity, the rare ginsenoside materials can be used for a raw material for a medical product or the like.
