The present invention relates to a method of preparing soy sauce using sesame dregs. The method of preparing soy sauce using sesame dregs comprises: a first step of roasting wheat and separately grinding 30 to 50% of the roasted wheat; a second step of grinding sesame dregs, steaming the ground sesame dregs by pressurized vapor, and cooling the same; a third step of mixing the wheat of the first step and the sesame dregs of the second step to mix 5 to 7 kg of yeast to the mixture; a fourth step of preparing mold bran by controlling temperature and humidity in a yeast room; a fifth step of mixing 6,600 to 7,800 L of a saline solution with the mold bran of the fourth step; a sixth step of fermenting and aging the mixture of the fifth step in a fermentation and aging tank for five to six months; and a seventh step of compressing (filtering) the fermented and aged mixture of the sixth step.;COPYRIGHT KIPO 2019
