The present invention relates to an apparatus and a method for reusing salt water for salting Chinese cabbage, which reuses salt water for salting Chinese cabbage in a Kimchi preparing factory commercially producing Chinese cabbage Kimchi to save resources. The method of the present invention comprises: a first step of separating and removing 80% or more of soluble solid eluted in the salt water in a form of scum in a process of salting Chinese cabbage by means of a physical method, a microbubble floatation, and removing remaining scum and insoluble solid by using a precoat-type diatomite filtering device; and a second step of oxidizing and removing a trace of soluble solid remaining by 20% or less in the salt water and odor, turbidity and remaining microbes caused by operation of microbes in salting Chinese cabbage by means of a chemical method, ozone contact-causing oxidization. Accordingly, waste salt water discarded after salting can be reproduced into salt water with physical properties equal to or better than those of newly prepared salt water such that the reproduced salt water can be reused. According to the present invention, treatment time required for the present invention is significantly reduced compared to a conventional method where soluble solid eluted in salt water is treated only by a chemical method, ozone contact-causing oxidization, and quality of salt water equal to or better than physical properties of the newly prepared salt water can be ensured such that the used salt water can be completely reused as salt water. Accordingly, an amount of waste water to be treated because of disposal of waste salt water can be reduced and salt can be reused, thereby reducing a burden on environment and saving resources.
