The present invention relates to a method of preparing instant corn soup powder and instant corn soup powder and, more specifically, to a method of preparing instant corn soup powder, which includes the steps of: (1) preparing extract powder of radish, carrot, radish tops, burdock, shiitake mushrooms, tomatoes, and onions; (2) adding corn and heating and stirring the same; (3) adding powder containing whole milk powder, refined salt, flavor enhancer, sugar, and pepper together with purified water and heating and stirring the same; (4) adding corn powder, potato starch, and rice powder together with purified water and heating and stirring the same; (5) placing a plastic material on a pan and mixing the components prepared in the steps (1) to (4) to produce granules; and (6) freeze-drying the granules, and to instant corn soup powder prepared by using the same. According to the present invention, the corn soup powder is prepared by using a freeze-drying method, thereby removing moisture as much as possible. Thus, it is possible to reduce the risk of microbial propagation. The soup is dissolved well when being cooked, and a less amount of bubbles is generated from the soup. The soup has less greasy taste but has deep flavor, thereby obtaining instant corn cream soup that suits taste of Korean consumers. In addition, according to the present invention, the corn soup includes powder of various vegetables, thereby being used as a functional food having an anti-inflammation activity.
