The present invention relates to a method for preparing potato soup powder, comprising the following processes: an immersion process for washing and severing unpeeled potatoes and then soaking the same in salt water; a drying process for drying the soaked potato using far infrared ray after collecting the same; a pulverization process for pulverizing the dried potato; and a distribution process for sorting out the pulverized potato powder by the particle size. Since the potatoes are unpeeled, the potato soup powder offers inherent flavors of potatoes, easily dissolves in water, and prevents formation of lumps when a user cooks the potato soup, thereby reducing inconvenience and being suitable to be used in the instant potato soup.
