The present invention relates to maple granules using a non-heat treatment method and a manufacturing method thereof. The maple granules comprises: maple syrup; and nuclei of granules, wherein the maple syrup has the suger content of 60 to 70 Brix and specific gravity of 1 to 1.5, and is produced by a low temperature vibration and reverse osmosis method, and the nuclei of the granules include 30 to 70 parts by weight of at least one powder selected from isomalt, erythritol or mannitol. In addition, the manufacturing method of the maple granules using the non-heat treatment method comprises the steps of: (a) mixing the at least one powder selected from isomalt, erythritol or mannitol to produce the nuclei of the granules; (b) spraying the maple syrup to the nuclei of the produced granules by a mist spraying method; (c) coating to form the maple granules by enclosing particles of the nuclei of the granules by particles of the maple syrup; and (d) drying the formed maple granules.
