The present invention relates to a white kimchi containing a wild grass fruit, which has improved taste and nutrition, and a preparing method thereof. The preparing method of the present invention comprises the steps of: salting Chinese cabbage for 70 to 74 hours; preparing a dried-pollack porridge; preparing kimchi filling; preparing a kimchi seasoning filling; mixing the kimchi seasoning filling layer by layer; and performing aging.
